When Summer time hits, there's nothing better than kicking back with a fresh, crisp salad, a couple of beers and a bit of music. This simple spinach salad is easily elevated with our range of delicious dressings...
Ingredients
For the Salad -
1x bag of fresh spinach leaves
1/2 red onion
2x spring onion shoots
1x red capsicum
Small handful of chives
1x carrot
1/2 cucumber
Salt & pepper to taste
Lemon zest to garnish
For the Pickled Carrots -
1x carrot (peeled, then grated or julienned)
1/2 cup rice wine vinegar
1/4 cup white sugar
2 tbsp sesame oil
1 tsp salt
Method
In a large jar or small bowl, add your pickle ingredients - rice wine vinegar, white sugar, sesame oil and salt - and whisk together well.
Julienne (preferred) or grate your pickling carrot and add to the pickle brine. Leave for a minimum of 20 mins (an hour if you can, or leave overnight for best results).
Dice your red onion, spring onion and regular carrot and add to large salad bowl.
Add your spinach leaves and douse with a generous amount of our Roast Sesame Dressing.
Season with salt and pepper to taste.
Slightly drain and add pickled carrot and finish with ribbons of cucumber. Toss to combine.
Garnish with a little lemon zest.
